🗝️ Pistachio Cherry Christmas Cookies Makes 16 cookies 1 cup butter, softened ½ cup powdered sugar 1 tsp almond extract 1 package pistachio pudding mix (3.4 oz) 1 2/3 cup all-purpose flour ½ cup maraschino cherries, drained, rinsed and roughly chopped ½ cup white chocolate chips
In a mixing bowl, beat the butter and sugar until combined. Add almond extract, pudding mix, and flour. Continue to mix until all ingredients are incorporated. Gently fold in the cherries and white chocolate chips with a rubber spatula. Gather the dough into a large ball, wrap in plastic wrap and refrigerate for 30 minutes. Preheat the oven to 350 degrees F. Round about a tablespoon of cookie dough in your hand and gently press flat on a cookie sheet lined with parchment paper. Repeat for the rest of the cookies. Bake for 12 – 15 minutes. Enjoy!
