🍎 Homemade Apple Pie with Flaky Crust
Ingredients
For the crust (makes top + bottom):
• 2 ½ cups all-purpose flour
• 1 tsp salt
• 1 tbsp sugar
• 1 cup (2 sticks) cold unsalted butter, cubed
• 6–8 tbsp ice water
For the apple filling:
• 6–7 medium apples (Granny Smith, Honeycrisp, or a mix)
• ¾ cup sugar
• 2 tbsp all-purpose flour (or cornstarch for thicker filling)
• 1 tsp cinnamon
• ¼ tsp nutmeg
• ⅛ tsp allspice (optional)
• 1 tbsp lemon juice
• 1 tsp vanilla extract
• 2 tbsp unsalted butter, cut into small pieces
For finishing:
• 1 egg, beaten (for egg wash)
• 1 tbsp coarse sugar (optional, for sprinkling)

Instructions
Make the crust:
1. In a large bowl, whisk together flour, salt, and sugar.
2. Cut in cold butter with a pastry cutter or fork until mixture looks crumbly with pea-sized bits of butter.
3. Add ice water, 1 tablespoon at a time, mixing gently until dough comes together.
4. Divide dough into 2 discs, wrap in plastic, and chill for at least 1 hour.
Prepare the filling:
1. Peel, core, and slice apples thinly.
2. Toss with sugar, flour, cinnamon, nutmeg, allspice, lemon juice, and vanilla. Set aside.
Assemble the pie:
1. Preheat oven to 425°F (220°C).
2. Roll out one dough disc on a floured surface and place it into a 9-inch pie dish. Trim edges.
3. Pour apple mixture into crust and dot with small butter pieces.
4. Roll out second dough disc and place on top. You can cover fully, make a lattice, or cut decorative shapes. Seal and crimp edges.
5. Brush top with beaten egg and sprinkle with coarse sugar if desired. Cut slits for steam if using a full top crust.
Bake:
1. Bake at 425°F for 20 minutes.
2. Lower temperature to 375°F (190°C) and bake another 35–45 minutes, until crust is golden and filling is bubbling.
3. Let pie cool at least 2 hours before slicing to allow filling to set.
